Sofia Donna Olivia reimagined the tradition by replacing lemon with “the lemon of the North” – flowering quince. Thus, a new interpretation was born: Quinmead.
Quin comes from quince. Mead refers to the drink’s roots.
The first sima, crafted entirely from Finnish ingredients, lightly fermented.
